Eggless Vanilla Cake

I have been on a hunt for the perfect eggless recipe of classic vanilla sponge for a very long time, one that's stable and comes together in no time! Finally I tried and mastered this recipe which I can report happily that is a game changer! Try it out this summer season and top it with fresh fruits to get the ultimate summer vibes and flavour burst.



Ingredients:


vANILLA CAKE
vANILLA CAKE

88.3 gms cake/ all purpose flour

100 gms caster sugar

1/2 tsp baking soda

Pinch of salt

120 ml whole milk / plant based milk (if you want to make it vegan)

40 ml Vegetable oil

5 gms vanilla essence

1/2 tbsp white distilled vinegar (used for cooking)






Recipe:


  1. Preheat the oven at 175C and grease and line a 6-inch baking pan.

  2. In a bowl, weigh in your dry ingredients (sift them), mix to combine.

  3. In another bowl, measure and combine the whole milk, vanilla essence, vegetable oil and white vinegar.

  4. Add the liquid ingredients in a slow and steady stream to the dry ingredients.

  5. Gently fold in and mix only till it’s well combined, do not over mix.

  6. Pour into the cake pan and bake for 25-35 mins (depends on your oven). Insert a tooth pick at the end, if it comes out clean it’s done.
