Cinnamon Roll

Cinnamon roll is like a hug in disguise, you have to try it out to know what a bliss this would be share with your family/friends or just for self-indulgence.

Ingredients:
Flour- 345 gms
Granulated sugar - 50 gms
Salt-1/2 tsp
Instant yeast- 7gms
Milk-120 ml (warm not hot/ boiling)
Water- 60 ml
Butter- 3tbsp (room temp)
Egg- 1 (room temp)
For the filling:
Butter - 4tbsp (softened)
Light brown sugar- 8 tbsp
Cinnamon ( as much as you like)
For the frosting:
Cream cheese- 1/2 cup
Milk to soften
Icing sugar- 4-5 tbsp Cinnamon
Lemon zest ( optional)
Method:
In a bowl, weight the flour.
In another bowl add in the warm milk, sugar, water, yeast and mix well
Add the milk mixture to the flour, then add in the egg.
Knead till the dough comes together, add in the salt and knead till it passes the window pane test.
In a greased bowl, cover the dough and let it double in a warm place ( depends on the weather- it might take 1 hr , keep an eye)
Once doubled, roll out on a clean surface, dusted with flour. Spread the butter, sprinkle the cinnamon and sugar and spread it out
Roll into a tight log. Using a thread cut into equal pieces ( refer to the reel)
In a greased baking tray arrange the cut pieces and let it proof till it’s double ( I kept in the oven with the light on)
Brush with milk once doubled and just before baking.
Preheat the oven at 190 C for 20 mins and bake for 25 mins in the middle rack.
